Dishwashing Liquid Bulk Buying Guide: Hand vs Auto Detergent

Hand dishwashing liquid and automatic (machine) detergent are not interchangeable. This buying guide shows commercial kitchens which to use, how concentrate and dilution drive the real cost-per-wash, and whether to buy 5L, 20L or 25L bulk.

Dishwashing liquid looks like a one-line item on the order sheet, but in a commercial kitchen it is really two different products doing two different jobs. Hand dishwashing liquid is the high-foaming detergent your staff use to wash up by hand in a sink. Automatic (machine) dishwashing liquid is a low-foam, heavy-duty detergent made for commercial glasswashers and dishwashers. Put the wrong one in the wrong place and you either flood a machine with suds or leave your sink detergent unable to cut grease.

This guide is for cafes, restaurants, caterers, aged care kitchens and facility managers deciding what to reorder. We cover the difference between hand and auto detergent, how concentrate and dilution set the true cost-per-wash, and whether a 5L bottle, a 20L drum or a 25L super-concentrated drum is the right buy for your volume.

The short version
  • Hand detergent = high foam, for washing up by hand in a sink. Auto (machine) detergent = low foam, for commercial dishwashers and glasswashers.
  • Never put hand dishwashing liquid in a machine - the foam floods the wash chamber and interferes with the spray arms.
  • Concentrated and super-concentrated detergents cost more per bottle but far less per wash, because you dose a smaller amount. Judge on cost-per-wash, not sticker price.
  • Rough sizing: 5L for a small cafe or single under-counter machine, 20L for a busy kitchen, 25L super-concentrate for the lowest cost-in-use at high volume.
  • Buy both lines bulk from the dishwashing liquid range and keep delivery free on Melbourne metro orders over $150 ex GST.

Manual sink

Hand dishwashing liquid

Hand dishwashing liquid is built to foam and to cut grease and food oils in a sink of warm water. The foam is a feature - it carries lifted soil and tells staff the water still has cleaning power left. These detergents are formulated to be gentler on skin than machine chemicals, because hands are in the water.

  • Use for: washing up by hand, pot and pan sinks, prep-area cleaning, three-sink wash-rinse-sanitise setups.
  • Foam: high - this is what you want in a sink, and exactly what you do not want in a machine.
  • Formats: scented concentrates (lemon, mint) in 5L and 20L, plus a 25L super-concentrated drum for the best cost-in-use.

Machine

Automatic (machine) dishwashing liquid

Automatic dishwashing liquid is a low-foam, heavy-duty detergent dosed automatically into a commercial dishwasher or glasswasher. Foam is the enemy here: it cushions the water jets and stops the spray arms blasting plates clean, so machine detergents are deliberately low-sudsing. They are also more alkaline and are not meant for skin contact - this product is for the machine, not the sink.

  • Use for: commercial dishwashers, pass-through and under-counter machines, glasswashers.
  • Foam: low by design - pairs with a rinse aid for spot-free drying.
  • Formats: auto machine liquid in 5L and 20L, plus auto dishwashing powder in 5kg and 20kg for kitchens that prefer a powder dose.

One rule covers most mistakes: high-foam detergent belongs in the sink, low-foam detergent belongs in the machine.

Concentrate, dilution and the real cost-per-wash

The cheapest drum on the shelf is rarely the cheapest to use. What matters is cost-per-wash: how much detergent each wash actually consumes. A concentrated formula lets you dose a smaller amount for the same result, so a drum that costs more up front can work out cheaper over the month.

A super-concentrated hand detergent - the kind in the 25L drum - is formulated so a small dose cuts through a full sink of greasy water. The higher the concentration, the further the drum stretches, which is why high-volume kitchens move to the big super-concentrate drum rather than restocking small bottles.

A simple way to compare two options:

  • Cost-per-wash = dose per wash x price per litre of detergent.
  • Work out the dose your staff actually use (mL per sink, or the machine's dosing setting), not the label's minimum.
  • Then compare: a concentrate at a higher price per litre but a much smaller dose usually beats a cheap, watered-down detergent you have to pour twice as much of.

For machines, the dosing pump does the measuring, so cost-per-wash is set by the pump calibration and your rack throughput. Getting the pump dialled in correctly is the single biggest lever on machine-detergent spend - under-dosing leaves film, over-dosing pours money down the drain.

Common questions

Dishwashing liquid FAQs

Can I use hand dishwashing liquid in a commercial dishwasher?

No. Hand dishwashing liquid is high-foaming, and that foam floods a commercial dishwasher, cushions the water jets and stops the spray arms cleaning properly. It can also leak suds from the machine. Use a low-foam automatic (machine) detergent instead.

What is the difference between hand and automatic dishwashing liquid?

Hand dishwashing liquid is high-foam and formulated to be gentler on skin, for washing up by hand in a sink. Automatic dishwashing liquid is low-foam, more alkaline and heavy-duty, dosed into a commercial dishwasher and usually paired with a rinse aid. They are not interchangeable.

How far does a 25L super-concentrated drum go?

A super-concentrated hand detergent is dosed in small amounts per sink, so a 25L drum lasts far longer than the same volume of a watered-down product. The exact life depends on how much your staff dose per wash, which is why high-volume kitchens move to the big concentrate drum for the lowest cost-per-wash.

What size should a cafe buy - 5L, 20L or 25L?

A 5L bottle suits a small cafe or a single under-counter machine. A 20L drum suits a busy kitchen washing all service. A 25L super-concentrate drum gives the lowest cost-in-use for the highest-volume sites. If you are between sizes, call the trade desk and we will match the drum to your throughput.

Is liquid or powder better for a commercial dishwasher?

Both work - it comes down to your machine's dosing setup. Auto liquid suits sites with a liquid dosing pump; auto powder suits machines set up for a powder dose. The more important factor is calibrating the dose correctly: under-dosing leaves film, over-dosing wastes detergent.
